Travellers tales

Annette started her career working in pubs and managing restaurants for other people and met Brendon whilst working in Leicestershire. The partnership has worked as they’ve created delectable food in everything from stately homes to bistros.

Annette and Brendon have developed a real following locally after having had a bistro in Mountnessing, run the Wheatsheaf in High Ongar (appearing in the Michelin and Egon Ronay guides) and purchasing The Cuckoo in 2009. Their clientele follows them around, having developed a deep appreciation for Annette’s ability to create a great ambience and Brendon’s skill in delivering exquisite dishes.

“We spent three years travelling and Brendon collected lots of new ideas for recipes along the way,” explains Annette. “We’ll eat anything and we really enjoyed visiting the local markets to see what sort of foods were on display in different countries.”

They visited China, Vietnam, Cambodia as well as Australia, India and Thailand, but the menus in The Cuckoo are far from oriental. Everything is based on fresh food, cooked beautifully – not that the little hint of exotic spices don’t appear in dishes from time to time!

Designed around today’s freshest food

Some of the food is more than just freshly delivered – it’s fresh out of the ground! Annette and Brendon have their own herb garden and also have their own free range chickens for super fresh eggs.

Brendon creates dishes around whatever is available from their local suppliers. The butcher has been supplying Brendon with top quality cuts of meat for the best part of 20 years and his steamed suet steak and kidney pudding is a real favourite with regular diners.

Game is frequently on the menu – look out for partridge with elderberries on the specials board. Brendon also makes all their own bread and home made ice cream, you’d better leave some room for dessert!
